Recipe ingredients: 8 kg mashed potatoes (1 pouch), 8 l liquid (4 l milk and 4 l water), 300 g butter, 1 dl salt.
Spread the mashed potato mix into a GN pan
(25 L). Bring the liquid to boil with the butter and salt. Pour the liquid
into the pan. Place the covered pan in a steam oven (approx. 100 °C). Stir
after 30 minutes and again after another 30 minutes. Then continue to cook the
mash in the oven for about 15 minutes.
